Ingredients

Honey Lemonade

Honey to taste

2/3 Lemons (just the juice if you wish)

500ml Water

 

Bacon Jalapeno Poppers

Pack of smoked bacon rashers (say 14)

7 Jalapenos

300g tub cream cheese (flavoured if you can get it)

 

BBQ Chicken Sandwich

Brioche buns

4 Chicken thighs

5tbsp Good quality BBQ sauce

 

Terry’s Chocolate Orange Cake

500g terry’s chocolate orange plus extra to garnish (4 should do it)

8 Eggs

120g salted butter

I know what you are thinking from the title of this video – Barry got a bit excited again! Well, yes. It is an excuse to use 4,3,2,1 in the title, but these really are 4 super delicious 3 ingredient recipes to try (at least) once in your life! Plus I wanted to keep this easy, 3 ingredients means just that, water etc is one of the ingredients in the following recipes!

3 ingredient honey lemonade

Lets start up with the honey lemonade. Super simple, but some of you will want it less bitter. If you remember this super easy lemonade recipe, it is essentially the same, except we are using honey rather than sugar. Feel free to just add the lemon juice and zest, but this recipe is all about mixing the flavour combo ratios until you are happy. Start with it weaker if you like with one less lemon, whizz up adding honey and water, then slowly add lemon quarters if you prefer.

But that is the steps essentially, into a blender add the lemon pieces, water and the honey. Whizz away then tweak to your liking. Honey is much milder in sweetness that sugar so you may need to add a fair amount to get it just right, but once you do, it’s blooming gorgeous! Pass through a sieve too if you want it smooth and serve chilled!

3 Ingredient Bacon Jalapeno Poppers

These are delicious! Work around the 3 ingredient limit using smoked bacon and a flavoured cream cheese if you can. Pre-heat the oven to gas mark 4 or equivalent (see converson charts). Halve and de-seed the jalapenos, fill using a spoon with the cream cheese, then wrap 1 or 2 bacon strips around it. Place on a lined baking tray and bake for x until the bacon is cooked to your liking and the jalapenos are blistered. Serve with extra cream cheese for dunking.

3 Ingredient BBQ chicken sandwich

So good this. Warm a griddle pan and halve your buns. Toast the buns on the pan, cut side down until lightly charred and leave to one side. Unravel your chicken thighs so they are nice and thin (if using a chicken breast you can bash thin with a rolling pin to help speed up cooking time), cook on a griddle until cooked through on both sides and golden in colour. Leave to rest on a board, slicing up is optional.

Get a small saucepan and warm up the bbq sauce on a gentle heat, just so it is just bubbling, but you don’t want to burn your pan so be careful. Add the chicken to the pan, stirring to coat it well in the bbq sauce. Serve the bbq chicken piled high into the toasted buns. Insanely good!

3 Ingredient chocolate orange cake

Yes, this is a thing. Pre-heat your oven to gas mark 5 or equivalent. In the video I warmed the chocolate and butter together in a saucepan, but to prevent the potential of the chocolate seizing do this instead in a large mixing bowl over a pan of simmering water (make sure the water doesn’t touch the bowl). Melt the chocolate orange with the butter until smooth and like a chocolatey orange lake in a bowl. Leave to one side.

Grab an electric whisk and whip up the eggs – whites and yolks. Do this for a good ten minutes to get them light and bubbly, the air will help with the cake. Slowly pour the chocolate orange mixture into the beaten egg mix and whisk as you go, keep going until all the chocolate mixture is in with the eggs. Do this gradually though. Pour into a lined cake tin and bake for 45 minutes or until springy on top and a skewer inserted inside comes out clean. Garnish with extra chocolate orange (a mix of segments and melted works well) and If you serve it still warm it’ll have a sort of gooey centre to it. If you let it cool and place it in the fridge for at least a good hour the centre is more like a chocolate orange mousse – very, very nice!
