Ingredients

3 ingredient flatbreads

2tbsp olive oil

350g self raising flour

400g Low fat natural yoghurt

3 ingredient vegetable curry

500g Frozen mixed Mediterranean vegetable pack (or any frozen veg)

200ml Coconut milk

1tbsp Curry powder (strength of your choice)

3 ingredient cherry coke float

Good scoop vanilla ice cream

1 can cherry coke

1 lime, quartered

3 ingredient maple banana pancakes

2 Bananas plus extra to garnish

4 Eggs

Maple Syrup to serve

4,3,2,1 – part 6! Here’s another 4 recipes that use just 3 ingredients! This time a vegetable curry with coconut milk, flatbreads to serve alongside, a cherry coke float with vanilla ice cream & banana pancakes with maple syrup! I hope this inspires you to have a go and pick up a pan & maybe add 1 or 2 other ingredients, this was another really fun challenge!

3 ingredient flatbreads

Add the oil, self raising flour and yoghurt to a mixing bowl and stir together until a dough forms. Use your hands if you wish to bring it together, but it should be ok as it comes together pretty easily.

Onto a floured surface take portions of the dough and roll out with a floured rolling pin until thin into your desired flatbread shape. Warm a frying pan and cook a flatbread one at a time until charred or you start to see bubbles appear on the surface, flip over and brown the other side, remove from the heat and repeat with remaining flatbreads. Keep warm before serving.

3 ingredient vegetable curry

Warm a deep frying pan on a medium flame, add your vegetables straight from frozen, place a lid on top and cook through stirring from time to time until fully cooked through and softened roughly 15 minutes. Add in the coconut milk & curry powder with the vegetables and stir through, ensuring it is evenly spread. Slowly bring the mixture up to a simmer and gently bubble away to thicken the mixture up and intensify the flavour. Don’t simmer off all the mixture, leave a little for moisture, but it will thicken nicely. Serve with the flatbreads and even dunk in a little spare coconut milk if you have some leftover from your tin.

3 ingredient banana pancakes

Mash the 2 bananas together in a bowl using a fork until a smooth banana pulp is achieved. Add the 4 eggs and mix together with an electric whisk until a smooth consistent mixture is achieved, do not over beat the mix.

Get a hot pan ready and carefully add the mix in the pan. It is best to work in small batches and get the pan hot so they do not move too much, the pancakes will be thin and delicate but keep your eye on them! Cook one side, carefully flip and cook the other, then stack and repeat. Serve with bananas wedged between and a good drizzle of maple syrup on top. If you aren’t staying strict to the 3 ingredients, lubricating your pan is a good idea with a little oil.

3 ingredient cherry coke float

Add the cola to a tall glass, squeeze in some lime juice and stir briefly. Top with a good dollop of vanilla ice cream, garnish with a wedge of lime on the glass. Serve chilled! Easy peasy! Mix this up with different fizzy drink combinations and ice creams.
