Ingredients

Smoky ‘Mac’ & Cheese & Peas

500g Pea Pasta or normal macaroni / elbow pasta

1.2l Whole fat milk

150g Smoky cheese like Applewood

Beef wellington

Ready made puff pastry sheet

1kg beef fillet

4tbsp Mushroom & bacon pate

Tropical sunset mocktail

200ml Orange juice

200ml 7Up / Lemon & Lime sparkling drink

few drops of Grenadine

Double chocolate peanut butter fudge

250g Peanut butter (chunky or smooth)

400g White chocolate chips

100g milk chocolate (to garnish / mix in)

4,3,2,1 – part 3! Well you guys loved part one of me showing you 4 different 3 ingredient recipes that use just 3 ingredients and part 2 so here is the third edition making it a trilogy! This time a non-alcoholic tropical sunset mocktail, smoky mac and cheese with peas, double chocolate peanut butter fudge & a beef wellington! Yes, a beef wellington!… 4 recipes made with 3 ingredients each! I hope this inspires you to have a go and pick up a pan, this was another really fun challenge!

3 Ingredient Smoky ‘Mac’ & Cheese & Peas

Grab a large saucepan and add the milk. Bring it to a simmer on a hob but ensure you keep stirring it to prevent it from burning the bottom of your pan. Add the pasta and cook to package instructions (roughly 10 minutes). Remove from the heat and stir in the cheese until melted. Serve pretty much immediately. The smoky cheese just adds more flavour with the limited ingredients, normal cheese / pasta works fine too.

3 Ingredient Beef wellington

This is the trickiest but it’ll all be good don’t worry! First up get your beef fillet into a frying pan and bring to the heat to cook every side of it and sear it, you want to have no red showing on the outside of the fillet, so turn and cook until done. Let rest on a chopping board. Roll out the puff pastry and spread the sheet with the pate nearly all the way to the edges. Wrap the rested fillet with the pastry and try to get it seal side down (the video shows why!). Tuck the pastry in neatly, make sure it is all sealed and lightly score if you wish any patterns with a knife. Allow to chill in the fridge for 20mins, and pre-heat your oven to gas mark 7 or equivalent.

Then lift the wellington onto a lined baking tray, warm the baking tray on a hob and cook the underside of the wellington for 2 minutes just to start it off and prevent a soggy base. Transfer to the pre-heated oven and bake for 30 minutes for a medium beef. Allow to rest for 20 minutes before serving!

3 Ingredient tropical sunset mocktail

Grab a glass and pour in the orange juice, lemon and lime drink, then slowly pour in a little grenadine to give a lovely sunset style gradient to the mocktail!

3 Ingredient Double chocolate peanut butter fudge

Put the white chocolate and peanut butter into a mixing bowl, then place in the microwave. Heat on 30 second blasts and removing, stirring as you go. Keep doing this until it is melted and smooth. Pour into a mould of your choice make sure it is lined, or if you are using a silicone tray / mould it will pop out with ease. Swirl in some milk chocolate if you wish (melt in the microwave separately on 30 second blasts). The swirl can be done by dolloping the chocolate on top of the peanut mix and swirling with a knife of bamboo skewer. Place in the fridge to set for at least an hour. This stuff is addictive!
