4 x 3 Ingredient recipes 2 try 1 time in your life part 9

Ingredients

Jaffa cake trifle
1 Pack of Jaffa cakes
1 tub clotted cream
1 pot chocolate pudding/custard

Pineapple and mint cooler
4 pineapple rings
4 fresh mint leaves, stalks removed
Handful of ice

Alfredo tagliatelle
300g fresh tagliatelle (or other pasta)
50g butter (shhh you didn’t see this)
50g Parmesan, plus extra shavings to serve
250ml double cream

Mixed bean, kale & tomato soup
400g tin mixed beans (in vinaigrette if you can get it)
2 x 400g tin chopped tomatoes in herbs
Large handful kale, washed

4,3,2,1 – part 9! Here’s another 4 recipes that use just 3 ingredients (well, apart from a little butter in one!). This time a 3 ingredient tomato, bean & kale soup, cheesy aldredo pasta, pineapple and mint cooler and a jaffa cake chocolate trifle! I hope this inspires you to have a go and pick up a pan & maybe add 1 or 2 other ingredients, this was another really fun challenge!

Jaffa cake trifle
Chop up the Jaffa cakes roughly and whizz them up in a food processor, try to get a mix of fine crumbs and small chunks for texture. Pile the Jaffa cake bits into a glass, add the chocolate pudding on top, then dollop on some clotted cream. Garnish with extra Jaffa cakes on top the cream if you wish and keep chilled until serving.

Pineapple and mint cooler
A super easy one this and you can easily tweak it with strawberries or lime / lemon juice. Simply add all the ingredients into a food processor and whizz until smooth. Also add a little juice from the pineapple tin if you wish. If it’s too strong add some water, if you want it stronger add more pineapple pieces / mint to taste.

Alfredo tagliatelle
Ok this is genius and yes I could have done it without the butter but I just thought, well heck, everyone has a bit of butter around the house! Warm a frying pan with the parmesan, cream & butter. Let it melt and simmer down slowly, keep stirring it until a lovely cheesy sauce has formed, take off the heat but warm back up after cooking the pasta. Put the pasta on to cook in a separate pan to package instructions, drain the pasta once ready and add in the cheesy sauce. Mix well to coat and then serve as soon as you can with extra Parmesan shavings and a good season of salt and pepper. You can really add more to this with cooked chicken, salmon etc!

Mixed bean, kale & tomato soup
This just works a charm. A really simple soup recipe. I got lucky and you can too if you get tomatoes in herbs and the mixed beans in vinaigrette (that’s rare and likely to be water)…. but my point is add this separately if you can. It’s just crazy how a tin with different sauces etc can transform a recipe without needing other bits!
Place the tomatoes, kale and beans in a pan. Warm over a medium heat and allow to simmer steadily for 30 minutes with the lid on stirring from time to time. If you want to make the soup thinner & don’t want it to be super chunky you can add water to the pan during cooking.
