Ingredients

chorizo scotch eggs
6 pack chorizo sausages
3 eggs
Ready made breadcrumbs

Mexican chicken bake
4 chicken breasts
400g Mexican cheese
600g Doritos salsa

Pina Colada Mocktail
Handful ice cubes
150ml Low fat coconut milk
350ml pineapple juice

Lemon & Limeade cake
300ml lemon lime fizzy drink
400g Pack of ready made cake mix
2 x 400g pots ready mate cream cheese frosting

Here we are again, part 4 of what was originally a fun idea – 4, 3 ingredient recipes 2 try at least 1 time in your life. In this video we are making chorizo scotch eggs, a non-alcoholic pina colada, Mexican chicken bake & a (fairly healthy) lemon & limeade cake using an awesome cooking hack!

3 ingredient chorizo scotch eggs
Ok first up boil your eggs. Get them into a saucepan with cold water and bring to a steady simmer, bubble gently for x minutes and then transfer to iced water. Once cooled remove the shells.
Get your sausages and push the meat out of them, it took me 3 sausages per scotch egg. Do shape the meat into a flattened area that the egg can fit into. Roll the meat around the egg so it is fully encased and pinch together any gaps. It should look like a big meaty baseball.
Beat together an egg in one bowl and add the breadcrumbs to another. Coat the meatball (that’s what I’m calling it) in the egg then sit in the breadcrumb mixture scattering extra on top to fully coat. If you like dunk it in the egg again then breadcrumbs to double coat it and cover any gaps. Bake on a lined baking tray for 25-30mins at 160c fan or equivalent. The chorizo oils may spill out during cooking and they could split a little but it’ll all be good. Allow to cool as they’re actually best served cold, rather than hot, even nicer after a little chill in the fridge too!

3 ingredient Mexican chicken bake
Get yourself a baking dish and add one pot of salsa to the bottom of it. Make sure the dish is just big enough to fit the chicken in it. Slice the chicken at an angle to create some pockets and add a few slices of cheese into each one.
Sit the chicken in the baking dish on top of the salsa, grate with more cheese, top with the other pot of salsa spreading evenly over the chicken, then grate extra cheese on top. Bake for 35minutes In an oven at 160c fan or equivalent for the first 20 minutes bake with tin foil on top, then remove and continue baking. Grate a little extra cheese on top once out the oven if you wish & of course do make sure the chicken is cooked through – it should be, but nobody likes medium rare chicken so in the unlikely event that it’s pink in the middle bake a little longer.

3 ingredient Pina Colada mocktail 
Nice and easy this one. Simply get your blender and add the pineapple juice, ice and coconut cream. Whizz together until smooth, serve chilled! You may want to add the coconut gradually to tweak the taste or use tinned pineapple and add chunks in like I do in the video for texture.

3 ingredient Lemon & Limeade cake
Part hack, part awesome recipe! Try mixing up the different drink combos like a chocolate cake mix with orangeade would give a chocolate orange cake!
Grab your packet of cake mix and empty into a large bowl, pour in the drink and mix really well until smooth. Bake in two lined tins as per package instructions or until lightly browned and a toothpick inserted comes out clean. Allow to cool fully before handling.
Frost the cakes with the ready made icing mixing in a little fizzy drink if you wish for some zing. If you use a zero type fizzy drink this is actually a healthy cake recipe!
