Ingredients

3 ingredient carrot fritters

3 medium carrots, grated and moisture removed

80g plain flour plus extra as needed

2 eggs

Vegetable oil for frying

3 ingredient pesto spinach tortellini

400g fresh tortellini (filling of your choice)

3tbsp green pesto

5 frozen spinach cubes or 200g fresh spinach

3 ingredient samoa cookies

2 medium ripe bananas

140g Dessicated coconut

50g dark chocolate, melted

3 ingredient nutella milkshake

3 scoops Vanilla ice cream

100ml milk

2.5tbsp nutella

3 ingredient carrot fritters

Make sure the grated carrot is dried, press it with kitchen towel after grating to absorb as much moisture as possible, mix in a bowl with the flour and egg, if it’s too wet add a bit more flour. Shape into patty shapes (you should get about 4/5 good sized ones) and dust in flour before frying in vegetable oil. To make sure the oil is hot enough, drop in a small piece and if it sizzles when it hits the oil, keep the heat on a medium low / cooking away. Drain on kitchen towel, best served with a bit of mayo or other dip.

3 ingredient pesto spinach tortellini

Cook the spinach in a saucepan of boiling water to package instructions, after a couple of minutes add in the tortellini, cook to package instructions (typically a few minutes) Drain most of the water away, reserving about 3tbsp in the pan. Dollop in the pesto and stir through gently so to not break the pasta. Stir to coat the pesto over the pasta and spinach and serve in a dish. Would be perfect with some grated parmesan on top!

3 ingredient samoa cookies

Mash the bananas in a bowl, stir in the coconut until it holds as a ball and is not sticky / can be shaped.

Roll up into table-tennis size balls and press flat, use an icing tip or your thumb to press a hole in the middle, place on a lined baking tray and repeat with remaining mix.

Bake at 160fan/180c or equivalent for approx 20 minutes or until the coconut is lightly browned. Allow to cool on a wire rack then drizzle with melted chocolate, allow to set then eat away!

3 ingredient nutella milkshake

Simply add the 3 ingredients to a blender and whizz away, add more milk as desired. Serve in a glass immeditely, or keep chilled.
