4,3,2,1 – part 12! Here’s another 4 recipes that use just 3 ingredients. This time a 3 ingredient chorizo hash, berry spritzer, chicken and mushroom bake & baby baked alaska! I hope this inspires you to have a go and pick up a pan & maybe add 1 or 2 other ingredients, this was another really fun challenge!

Chorizo Hash
Warm a frying pan over a medium heat. Add the chorizo and cook through well to release the oils, once you see the edges of the chorizo starting to brown add in the courgette and potatoes and continue to cook over a high heat, stirring regularly. Try to lightly char the potatoes and courgettes if you can do for added flavour. Once happy pile on a plate and serve hot or cold – goes great with a poached egg dolloped on top.
Chicken and mushroom bake
Pre-heat the oven to 190c / 170 fan. Put the chicken breasts into a baking dish and bake for 25 minutes. Remove from the oven and add the frozen vegetables and rice mix, then the soup. Mix together briefly and return to the oven to bake for 20 more minutes to warm through. Allow to cool before serving
Baby Baked Alaskas
Whisk egg whites til stiff peaks form, slowly whisk in the sugar in batches until all added and the mix is thick and glossy and stiff still. Unpack the ice cream from its packaging place on baking parchment / a plate, coat in the whipped whites lightly until fully covered, spiking it with a bamboo skewer if you wish. Keep in the freezer until you want to brown the coating. Do this with either a chef’s blowtorch or under the grill for 90 seconds. Keep in freezer til you want to eat them.
Berry Spritzer
Add the blueberries, raspberries and grapes to a food blender, reserving a couple as a garnish and also ensuring all stalks are removed. Whizz up until smooth. Get a glass add some ice and pour the mixed fruit on top, add a little sparkling water (optional) then stir well to combine before drinking.
