Tropical smoothie

200g Mango & Pineapple fruit mix (or similar)

300ml coconut milk (or more to taste)

30g chia seeds (optional)

In this 4321 using 3 ingredients (or items!) we make a tropical smoothie, some sweet chilli jam sticky bagels, emergency chicken noodles and some cinnamon roll toffee apple pie cups! These are all very simple recipes for you to try and put your own spin on, so good luck and enjoy!

Sticky Bagels

Lightly toast the bagels under a grill until lightly browned. Remove from the grill, spread on a layer of sweet chilli on the browned face side of the bagel halves, dot with mozzarella pieces. Return to the grill to melt the mozzarella for and warm through for 5 minutes or until bubbly and melted, keep your eye on it and serve as halves or join 2 together to make a whole bagel if you wish.

Speedy Noodles

Wash the stir fry mix and leave to one side. Bring a saucepan of water to boil adding your stir fry mix and noodles (including the seasoning packet it came with, if not add some mixed herbs or a stock cube) bubble away for 3-4 minutes to wilt the vegetables and cook the noodles, slice up your cooked chicken and add to the pan and bring to a boil, let it bubble away and warm the chicken. Drain off any excess fluid you don’t want in the pan but you could use it all for a ramen vibe, serve in bowls with the sauce that came with the noodles as a topping if using- we had teriyaki sauce.

Toffee apple pie cups

Open up the cinnamon roll tube, it will hopefully have an icing sachet too, keep that to one side. Slice the cinnamon roll dough into 1inch thick discs and press into a cupcake tray. Press it well, to form a sort of bucket for your filling. Fill with the apple slices and then bake to package instructions using the temperature recommendation on the dough packet – typically around 15 minutes or until the dough is browned. Make up the icing by mixing a little water – say a tsp at a time and mixing to dissolve the icing sugar, add more water if it’s too thick, but don’t make it too runny! Pour the icing and caramel over the top of the baked cups!

Tropical smoothie

Simply add the fruit mix and milk to a blender and whizz up, adding more fruit / milk to your liking for the correct thickness. Remembering the chia seeds will thicken the texture up too overnight if storing. Stir through the chia seeds and serve immediately or keep chilled in the fridge. This is all about consistency so if you want a thicker one only add the milk as necessary, play around with it!
