Tomato Avocado Bruschetta

Ingredients

10 small sun dried tomatoes roughly chopped
half an avocado, sliced in chunks
half a red onion, finely chopped
1 small gem lettuce, finely shredded
1 garlic clove, chopped
juice of half a lemon & zest if you like
1tbsp balsamic vinegar
1.5tbsp olive oil
ground black pepper
along with bread of your choice thinly sliced – get some good stuff

In this video Barry shows you how to make an incredibly simple but flavour packed slightly zingy sun dried tomato avocado bruschetta which makes a delicious snack that anybody can make.
