Tofu Bruschetta

5tbsp olive oil, tbsp balsamic vinegar, tsp ground black pepper, zest and juice of half an orange, zest and juice of half a lemon, 2 garlic cloves, pack of tofu pressed and drained, 200g chopped tomatoes, handful fresh coriander, handful fresh parsley,  half a yellow pepper, slices of your favourite bread

In this video recipe Barry makes a meat-free snack by rustling together some delicious tofu bruschetta with a little roasted lemon kick – very addictive!
