Bruschetta Spaghetti

500g spaghetti
3 large tomatoes, chopped
1 red onion, finely chopped
1 garlic clove, chopped
2tbsp parmesan
handful croutons
handful chopped basil
tbsp chopped coriander
salt & pepper to season
balsamic vinegar to your liking
good 2tbsp extra virgin olive oil

In this video recipe Barry shows you how to make a really super simple mid-week supper – bruschetta spaghetti.
The great thing about this dish is that it’s super refreshing and it is only the pasta that needs to be cooked. Feel free to pad it out with some cooked meat such as chicken breast etc but there’s something great about the fact this pasta isn’t bogged down by a creamy sauce and the simplicity of the balsamic vinegar with the olive oil is enough to carry it through, you’ll love this.

The Ingredients will serve 4 comfortably.
