Spiced pumpkin latte

by Barry Lewis

Ingredients

250ml milk (1 cup)
70ml espresso (1/4 cup)
1tbsp pumpkin puree
1/2 tsp vanilla extract
1 tsp pumpkin spice or mixed spice
1tbsp white sugar
cream & more spice to finish

This is an absolutely gorgeous recipe for a homemade spiced pumpkin latte that is so simple to chuck together and will go down a storm!!

Start off my combining half of your milk, with the pumpkin puree, pumpkin spice mix (or mixed spice will do), and vanilla extract, mix through and then bring up to a simmer. As soon as it is bubbling add in the sugar, mix through and simmer for 5 more minutes.

Remove the mixture from the heat and stir in the remaining milk. Pass this all through a sieve to get rid of any lumps – nobody wants a lumpy coffee, although these bits do taste amazing!! With it all lovely and smooth return to the pan and simmer again, should only take about 2 minutes as it’s already so hot. Remember to take out any excess pumpkin lumps from your saucepan before simmering otherwise there was no point in using the sieve!!

Stir in the espresso over the heat, once combined pour into your glass to serve and top with some cream and a sprinkling of more spice.

It is so delicious!! But feel free to add more or less coffee, milk and spice… basically like any recipe, customise it and make it your own folks, enjoy the amazing spiced pumpkin latte it’s a real winter warm with just enough spice and naughtiness!
