Pumpkin Spice Loaf Cake

Ingredients

Cake ingredients:

60g butter

125g golden syrup

100g plain flour

25g self raising flour

pinch salt

1 tsp bicarb of soda

100g caster sugar

125ml milk

1 egg, beaten

Homemade mixed spice:

1 tsp cinnamon

1/8 tsp ground clove

1/4 tsp nutmeg

1/4 tsp ground ginger

Marmalade Topping

3tbsp marmalade

1tbsp water

How to make a deliciously gorgeous pumpkin spice loaf cake! Super easy, but amazingly gorgeous with a tasty marmalade glaze on top.

Melt the butter in a saucepan over a medium low flame and pour in the golden syrup, stir over the flame until all melted and merged together, do not bring it to a boil, just get it into an even brown liquid texture, then remove from the heat for the time being.

We now make our homemade pumpkin spice mixing together the cinnamon (1tsp), ground cloves (1/8th tsp), nutmeg (1/4tsp), ground ginger (1/4tsp) until consistent in colour, do this in a small ramekin or similar.

Sieve both of the flours into a bowl. with the bicarbonate of soda and the pumpkin spice mixture we just made. Mix all of the dry ingredients together with a spatula add a sprinkle of salt and the sugar at this point too, along with the beaten egg & milk. Whisk up with an electric mixer and then pour in the buttery golden syrup mixture from earlier.

Pour this mixture into a lined loaf tin and bake at Gas mark 3 or equivalent (see baking conversion charts) for 45 minutes then allow to cool on a wire rack.

To make the marmalade glaze warm the marmalade in a pan on a low flame, to loosen up initially then add a little water and mix through. Brush this onto the cake before serving – delicious!
