Pumpkin Pizzas

Ingredients

400g Ready made pizza dough

300g Pizza sauce / passata

150g grated mozzarella

Handful of fresh basil, chopped, plus extra to garnish

6-8 slices pepperoni, chopped into small pieces

2 egg yolks

1tbsp paprika

String to tie the dough

Now there’s a pizza recipe, there are pumpkin flavoured pizzas, but then there’s Halloween inspired pumpkin pizzas?! Yes sort of a cross between a pumpkin and a calzone, the family and I wanted to give these a try for a Halloween recipe, and they were both tricky and fun to make! Hope you want to give them a go!

First up mix together the passata, basil mozzarella and pepperoni. Add the passata last as you don’t want the mixture to be too wet. Ideally easy to shape so it won’t run off the dough.

Portion the dough into small pieces and dollop a piece of the filling in the middle, life up carefully into a pouch shape and pinch together well at the top to completely seal. Now use the string to work around the circle to create pumpkin lines, it should look like a bulb of garlic, changing the string at 90 degree angles each time do not do this too hard or the dough will burst out when baking.

Cut off any excess string and sit on a baking tray, repeat with remaining dough, lining them all up on the baking tray.

Beat together the egg yolks with the paprika and brush over the dough to stain it. Bake in an oven pre-heated to 180c/160fan for 20-25 minutes or until golden brown all over and pumpkin like! Allow to cool before placing a little basil leaf on top. They will be very hot at first so please do not let small children bite straight away into them (think McDonald’s apple pie territory). It is also best to allow them to cool before trying to remove the string – do this slowly and carefully 🙂
