Red Velvet French Toast

Ingredients

2 eggs

250ml buttermilk

1 tbsp sugar

1 tsp vanilla extract

1 tbsp cocoa powder

Red food colouring

4 slices bread

 

For the filling;

115g cream cheese

1 tbsp sugar

½ tsp vanilla extract

Icing sugar to dust

Chocolate sauce for drizzling over the top

Absolutely gorgeous, but very naughty Valentines day inspired red velvet french toast recipe for you to try!

To make this red velvet French toast (or eggy bread as Mrs Barry calls it), first up make the cream cheese filling. Beat the sugar, vanilla extract, and cream cheese together until smooth. Place in the fridge until you are ready to use it. Now to make the red eggy batter, grab a large mixing bowl and whisk together the eggs, buttermilk, sugar, vanilla extract, and cocoa powder until smooth. Add in the food colouring, until you have a vibrant red colour, and mix well.

Transfer into a shallow bowl and dip the bread in, one piece at a time, ensuring both sides are covered in batter. Heat a large frying pan over a medium heat and lubricate well (we used a butter spray). Once the pan is hot add the bread and fry for 2 minutes on each side, until it is just cooked. If you leave it too long the bread will catch and you will have a nice charred effect. Remove and place on a warm plate. Grab your cream cheese mixture from the fridge and spread a generous amount on one piece of bread. Place another piece on top, and cut in half. Finish with a dusting of icing sugar, a drizzle of chocolate sauce, and a dollop of the sweetened cream cheese. A perfect valentine’s day breakfast treat!
