Quinoa Burgers

Ingredients

250g (1.2 cups ) cooked quinoa
2 eggs, beaten,
tsp salt
2 spring onions, chopped
30g grated parmesan (1/3 cup)
2 garlic cloves, chopped
60g breadcrumbs (2/3 cup)
handful fresh chopped parsley
burger baps

toppings/fillings of your choice – I used
1 beef tomato
rocket salad
sweetcorn relish
fresh mozzarella slices

In this video recipe let me show you how to make some amazing homemade quinoa burgers with a yummy mozzarella topping and sweetcorn relish, super quick, delicious & easy!

The first thing you need to do is cook your quinoa to package instructions, normally simmering it in a pan for 20-25 minutes until water is absorbed and tender. Note the ingredients for this recipe are for the cooked quantity of quinoa, it gets significantly heavier once cooked, so make sure you don’t make too much.

Let the quinoa fully cool in a bowl and drain if necessary, once cooled combine all of the other burger ingredients into a mixing bowl and stir well until fully mixed.

Make patty shapes using baking paper, you can use your hands if you wish but it may stick to them so I just used the paper, shape into funky patty shapes then cook in a pan of oil for 5 minutes either side until golden brown. Sit on kitchen paper whilst you cook up more batches. Note when frying if you cook in shallow oil like I did you will have a softer inside, fully submerge the burgers in oil if you want a more hardened middle and crispy edges.

Serve the quinoa burger patties in a bun with some rocket salad, tomato and sweetcorn relish, or with anything you like really! Give these a go, put your own spin on them, and let me know how you get on!
