Vegetarian Quinoa Chilli

Ingredients

100g quinoa, rinsed
180ml water
1 small red onion, chopped
2 garlic cloves, chopped
1 heaped tsp cumin, 1tbsp mild chilli powder
1tbsp dried oregano
1/2 courgette, sliced
600g tin chopped tomatoes
500g mixed beans in water (reserve a little to go in with it)
2 peppers, chopped & de-seeded
3 sweet bell peppers, chopped & de-seeded
120g tin sweetcorn, drained
grated cheese, sour cream & chopped coriander to serve

In this recipe video Barry pools together several recipe requests to show you how to make an incredibly delicious vegetarian quinoa chilli. It’s such a fantastic dish to make and can easily be tweaked to add meat or made vegan by omitting the cheese and sour cream at the end.
I’m sure you’ll have a lot of fun playing around with this recipe, it’s all about experimenting with the ingredients – I made mine pretty mild so the kids could enjoy it but put your own twist on it and I promise you’ll come back to this again.
