Veggie Chilli Chow

2 fresh loaves of bread
1 red onion
2 garlic cloves
1 tsp cumin powder
1 tsp mild chilli powder
1 tsp oregano
1 courgette
400 g mixed beans in water
2 red peppers, diced
3 sweet bell peppers, diced
120 g tinned sweet corn
Grated Cheddar, to serve
Sour cream, to serve
Fresh coriander, to serve
400 g tinned tomatoes
150 g quinoa, simmered for 15 minutes and drained
