Potato and Pea Salad

Ingredients

4 Désirée potatoes, peeled and cut into 2cm cubes
60ml olive oil
1 lemon, zest and juice
150g fresh peas
2 sticks celery, sliced
1 tbsp chopped fresh parsley, finely chopped

Here’s how to make a deliciously light and simple potato and pea salad recipe, it’s slightly warm with a refreshing kick that’ll really compliment something larger alongside at a BBQ but of course you can make it all year round and have it on it’s own. I’ve called it a naked salad as it’s not bogged down with a load of mayonnaise but still full of taste – give it a go!
