Sweet Potato Toast

1 large sweet potato

1 avocado (ripe)

1 red chilli, chopped and de-seeded

1 lemon

4 slices of bacon

Eggs (to poach optional)

Olive oil

Salt & Pepper

This recipe (that is just as much as a life hack than a recipe too really) is on how to make sweet potato toast. Yes, sweet potato toast, that is sweet potato put into a toaster, yes. Got it? Ok, I was not convinced either, but it works!

Simply wash and completely dry the sweet potato and slice it into 1 inch thick discs that will fit into your toaster then toast for a good 5 minutes until charred. It may pop up several times during ‘toasting’ until it starts to char, but it really works and tastes great. A super lazy way to cook it, but what you can do with it afterwards is up to you!

I topped mine with avocado, which is mushed in a bowl with red chilli, lemon juice, pepper and olive oil, some bacon rashers and a poached egg. Garnish with some fresh parsley and more lemon juice but mix it up any way you like, give it a go, and enjoy, it really works a charm!
