One pot pasta

Ingredients

1/2tsp oil

1tsp butter

1 onion, sliced

2 garlic cloves,

3 large chopped tomatoes

Good handful fresh coriander

250ml passata

1tbsp sweet chilli sauce

Handful frozen peas

400ml chicken stock

90g spinach

Small bag jumbo Prawns / shrimp, peeled, frozen

350g fresh pasta

Salt and pepper to season

Parmesan to serve

This one pot pasta recipe is absolutely amazing, and, unlike some one pot recipes, this really is only one pot I promise. Super easy recipe you could do blindfolded, I really hope you can give this a try. Play around with the ingredient combinations, works great with other meats or even meat free using special pasta types. Enjoy!

Start off by getting a large saucepan and putting in the oil and butter. Warm on a medium flame, then add in the onions and garlic cloves. Cook this away for a few minutes to soften up before plonking in the chopped tomatoes and cooking for a further 5 minutes.

You can then start to add in more ingredients – some coriander stalks, passata, stock, sweet chilli sauce, peas, spinach and spaghetti! Stir this all around and bring the pot to a simmer.

Once it hits the simmer stage add in the prawns and cook through stirring as it cooks. Season the pot too to taste and make any extra tweaks you wish. The prawns need to cook for a minimum of 5 or 6 minutes but you can keep cooking and simmer down to reduce the fluid in the pan.

Simmer for 10 minutes is a good aim and it should be nice and reduced. Serve up in bowls with extra coriander, black pepper and parmesan on top – delicious!
