Homemade After Eight

Ingredients

200g dark chocolate

300g icing sugar

1tsp mint extract

In this video recipe learn how to make homemade After Eight chocolates. These thin mint style chocolates are easy to make & taste brilliant!

The steps are extremely simple in making them, you only need a few things….. dark chocolate, icing sugar, peppermint extract and water.

Melt your dark chocolate either over a pan of simmering water or in a microwave inside a mixing bowl on 20-30 second blasts.  I found it best to use a silicone baking tray for this but if you are feeling flashy you can actually make a custom square set using tin foil like I also show in the video …. warning this will take quite a lot of time and if you are not too worried about the shape choose the easier method.

Drizzle a thin layer of dark chocolate into each compartment, giving it a gentle tap ensuring it settles and removes any air bubbles. Then place in the fridge to firm up for 20 minutes.

Meanwhile make the mint filling. Add water gradually to the icing sugar until you get a thick paste that just moves, you don’t want it to be runny so that it settles in place. Once you are happy with the consistency add a trickle of mint extract and stir through.

Carefully spread about a teaspoon of mint extract to the centre of the chocolate bases from the fridge, spread out gently but do not let it touch the edges. Add another thin layer of chocolate over the top of the mint icing to seal in the icing then place in the fridge for a good 30-45 minutes or until completely the chocolate is completely set.

The best thing about these homemade after eights is the freshness you get after making them, but don’t forget you can also mix up the flavourings used too other than mint. Give them a try you’ll love them!
