Homemade Candy Apples

by Barry Lewis

Ingredients

600g sugar (3 cups)
165g corn syrup (1/2 cup)
250ml water (1 cup)
tsp cinnamon
tsp food colouring of your choice
apples of your choice – i used pink lady
chocolate to melt (if using)
Sprinkles / toppings of your choice

These homemade candy apples are incredibly good, but before you start you must grab yourself a cooking thermometer! Got one? Ok, lets do it.

Push your bamboo skewers into your apples and sit them on a tray lined with baking paper.

Combine the water, sugar and corn syrup (use golden syrup or liquid glucose if you can’t get corn syrup) into a saucepan and over a medium heat mix to dissolve the sugar initially and then keep heating until it gets very hot and bubbly, be careful. You need to get the mixture up to 300F or it will not be the right consistency.

Once at this stage take the pan off the heat and add in the cinnamon and the food colouring of your choice! Mix this through until fully combined. Now begin to dunk in your apples one at a time holding them by the bamboo skewer and getting them coated fully.

Rest on the baking tray and repeat until all apples are coated. You can add different chocolate and other coatings on top like nuts if you wish folks and really personalise them before gobbling up! That’s it, hope you give the homemade candy apples a try and send me any if you have them spare, they make a great homemade gift!
