Apple Strudel

Ingredients

4 small apples, peeled, cored & chopped
1 lemon
150g brown sugar (3/4 cup)
2tsp mixed spice
4tbsp raisins
4 sheet filo pastry
2tbsp melted butter
2tbsp white sugar
icing sugar, chopped almonds, toffee sauce for decoration optional

This homemade apple strudel recipe will blow your mind!! Super simple to make and pretty customisable too. This is the third video recipe in apple month, we have already had these gorgeous rose apple pies and this tangy apple cider chicken, try those out too if you haven’t already!

First up if you have not already core, peel and slice your apples into chunks then sit in a bowl of water with the juice of a lemon squeezed in it. This is to stop the apples turning brown, additionally though if you whizz up that leftover water with some more lemons and sugar you can get an awesome homemade lemonade, check this link for more info on a homemade lemonade recipe using that principle.

Mix in a bowl the brown sugar with the mixed spice and raisins, give them a brief stir until combined and put to one side.

Grab a sheet of filo pastry on your tea towel, coat in melted butter, then sprinkle on a layer of brown sugar. Drape another sheet of pastry on top then repeat with butter and brown sugar mixture, then repeat this step one more time before finishing with a final sheet of filo pastry on top.

Drain off your apples, then place them in a row along one end of the filo pastry, brush the opposite end with melted butter then carefully roll up the pastry to seal in the apples using the melted butter strip at the other end to seal it in place.

Bake in the oven for 20 minutes on gas 4 or equivalent see baking conversion temperature chart, then allow to cool.

Decorate with a good dustin of icing sugar, toffee sauce, almonds and a drizzle of icing made using a little water and lemon juice.
