Grilled Pineapple with Mojito Cream

Ingredients

Pineapple rings from a tin or fresh Peach halves
Fresh mint
300 ml Double cream
3 tbsp Sugar
Drop of vanilla extract or vanilla pod
1 tbsp White rum

This grilled pineapple with mojito cream recipe is up there with both one of the simplest but most delicious things I have ever made. The combination of the freshly grilled pineapple slices with the rum, mint and lime zest worked through whipped cream works a real charm, it’s super naughty and refreshing! Oh, and of course you don’t have to make it on the bbq and can make it indoors if you prefer by grilling indoor or pan frying the pineapple – enjoy, I know you will and let me know how you get on!
