Grilled Pineapple Mojito Dessert

Ingredients

4 fresh pineapple rings
2 choc chip brioche rolls, halved
Handful fresh mint, chopped
10 tbsp double cream
2tbsp icing sugar
1tsp vanilla extract
1tsp spiced rum (optional)
2 bashed meringue nests (optional)

In this video recipe I show you how to make grilled pineapple mojito dessert! It’s absolutley gorgeous, with chocolate chip brioche & a minty whipped cream alongside, you can make this on a bbq like I foolishly did in the video (darn English weather!) or simply cook inside all Year round.

Start by getting the bbq nice and hot and then placing down your pineapple strips. This will char them up beautifully after about 5 minutes and create a lovely sweet caramelised edge to an already awesome fruit! Put the pineapple to one side on the bbq away from the coals but still to keep it warmed, then place down the chocolate chip brioche rolls. They literally take 30 seconds to char, any longer and they will fully burn so be careful! Once both the rolls and pineapple are down stick on a plate ready for serving.

I serve it alongside a mojito style whipped cream (minus the limes). Simply whip up double cream in a bowl until soft peaks form and then add in the icing sugar, vanilla extract, chopped mint, rum (optional, omit if you like) & bashed meringue nests (also optional). Sprinkle some more mint on top and then serve immediately, super good stuff right there, a real tropical taste explosion in your mouth! Give this recipe a go and let me know how you get on!
