Easy Yorkshire puddings

Ingredients


4 eggs
Handle chopped parsley
Thin strips of cooked roasted beef
12x 1 tsp sunflower oil
140g plain flour
200 ml milk
Salt and pepper
1tbsp Horseradish
1tbsp Mayonnaise

How to make deliciously easy homemade Yorkshire puddings! The most important thing to do before you beginning make these mini Yorkshire puddings, is to get your oven nice and hot, so pre-heat it to 180C Fan, 375 F. Pour 1 tsp of oil into the bottom of each hole of a muffin tin and place in the oven to heat through while you make the batter. Grab yourself a large mixing bowl and whisk together the flour and the eggs until smooth. Add in the milk, a little at a time, mixing until smooth and lump free. Season with salt and pepper and pour into a jug. Remove the muffin tin from the oven and carefully pour the batter into each hole, about half way. Place back in the oven for 20 minutes, until golden and puffed up. Do not be tempted to open the oven, otherwise the batter will not raise! Remove and allow to cool on a wire rack. In a small bowl mix together the horseradish and mayonnaise. Fill the Yorkshire puddings with a few strips of roast beef, topped with a dollop of horseradish mayonnaise, and sprinkle with chopped parsley. Enjoy!
