Easy Chicken Bake

by Barry Lewis

Ingredients

4 chicken breasts

4 tsbp bbq sauce

1 onion, sliced

Handful chopped parsley, plus extra to garnish

Smoked salt

Pepper

4 slices red Leicester cheese

4 slices smoked cheese

This easy chicken bake recipe is so simple you could make it with your eyes closed. Well, I basically do that in the video to show you how easy it is I put on a blindfold to carry out constructing the recipe (do not chop or put things in an oven blindfolded!). A really lovely smoky cheesy chicken bake that will go down a storm, but feel free to omit the bbq sauce with tomato sauce and use mixed herbs to completely switch it up, you can also use other meats too, like pork or lamb.

Place 4 chicken breasts into a baking dish spread apart, season with salt (smoked salt if you have it) and pepper, then squeeze on a splodge of bbq sauce onto each chicken breast, using the back of a spoon to coat the chicken and stain it in the bbq sauce.

Top each chicken breast with some sliced onion strips & parsley, then coat with both a red Leicester style cheese for some tang and a decent smoked cheese such as Applewood, absolutely gorgeous! And that is basically all of the steps!!

Bake in a pre-heated oven at gas mark 4 (or equivalent – see temperature conversion charts) for a good 45-minutes to cook the chicken through completely. The cheese should be golden and bubbling on top!

Garnish with some more chopped parsley & serve with some steamed green beans and rice – super simple, super easy!
