Bacon Jalapeno Poppers

Ingredients

Jalapeno peppers / Sweet bell peppers

4 tbsp cream cheese

4 tbsp mature cheddar cheese grated

bacon rashers

3tbsp light brown sugar

1tbsp smoked paprika

sour cream dip to serve

This is an absolutely stonking recipe for bacon jalapeno poppers…… well, a twist on them! Like unlike normal jalapeno poppers these are not fried and also I switched them to use sweet bell peppers for a little less kick (plus the kids absolutely love them)….. anyhow use jalapenos if you want, but as a non deep fried alternative (don’t worry i’ll do fried ones soon) these were amazing!

Simply halve your peppers, de-seeding them and removing any white membrane. In a mixing bowl mix the two cheeses together and then fill the peppers all the way to the top.

Wrap each pepper half in bacon you can completely cover them or just cover a little if you wish. Mix together the paprika and sugar in a bowl until well merged then coat the bacon in this mixture.

Bake in the oven – I know baked jalapeno poppers crazy eh?! For 15 minutes  at Gas mark 4 or equivalent (see conversion cooking charts) or until the bacon is caramelised and serve after leaving to cool for a few minutes dunked into sour cream sauce – amazing!!
