Smore Doughnuts

Ingredients

125g butter

200g marshmallow fluff

1tsp vanilla extract

4 pack of doughnuts

handful washed blueberries

200g milk chocolate, ideally thin in height

chocolate sauce to serve

bag of marshmallows

 

This is part food hack part super tasty recipe! We are making smore doughnuts! A s’more is a biscuit wedged campfire treat held together by toasted marshmallows and melted chocolate… here we are using this concept for a tasty treat with an additional marshmallow frosting on top!

To make the marshmallow frosting combine icing sugar, butter and vanilla extract in a large bowl and beat well until smooth with a spatula or ideally in a stand mixer if you have one. Leave to one side, you’ll have plenty left to frost a cake with or just reduce the quantities.

Slice your doughnuts in half through the middle, and lay out cut side up on a lined baking sheet. Place pieces of chocolate (thinner the better) on top of the doughnut halves then top with a few small (or one mega) marshmallow. Place under a grill to toast the marshmallow, this will take about 2 minutes, but keep your eye on them. Plonk the tray into an oven pre-heated to a medium temperature to bake for 3-4 minutes just to warm through the middles of the marshmallows. Remove and top the marhsmallows with blueberries (you may want to break open the marshmallow crust just to get to the sticky filling) top with the other doughnut half. Finish with marshmallow frosting, chocolate sauce and more blueberries!
