Smore Cheesecake Cupcakes

Ingredients

250g digestive biscuits

100g melted butter

200g marshmallows

100g icing sugar

250g cream cheese

tsp vanilla extract

200g milk chocolate, melted

This is a no bake smore cheesecake cupcakes dessert that is ready in a flash, literally 20 mins of steps and the fridge will do the rest. Mixing together a biscuit base, marshmallow filling and chocolate topping, simplicity, but gorgeous, yummy portion size simplicity.

First up whizz the biscuits / graham crackers in a food processor until crumbs are achieved. Pour in melted butter and whizz again to coat them. Press the biscuit crumbs into the bottoms of cupcake cases and place in the fridge for the moment.

Melt the marshmallows in a microwave, stir until smooth, then pour in the icing sugar and cream cheese, plus vanilla extract if you wish to take the sharpness out of the final taste. Spoon this on top of the small biscuit bases and place in the fridge again.

Melt the chocolate in the microwave on 30 second blasts until melted and smooth, spoon on top of the marshmallow filling mixture and allow to set in the fridge for an hour at the least. Top with extra biscuit crumbs, marshmallows and chocolate drizzle.
