Oreo Cookies and Cream Cheesecake

Ingredients

crust / topping
2 packs oreos
250g butter (1.1 cups)
melted white chocolate to coat

filling
500g cream cheese (2 cups)
100g sugar (4.5 oz)
3 eggs
12 oreos

In this video I show you how to make a delicious Oreo Cookies and Cream Cheesecake super gorgeous a fully encased cheesecake with white chocolate topping!

First thing you want to do is get your cream cheese into a mixing bowl, dump in your sugar and mix together to soften the cheese and dissolve the sugar into it.
Then you want to add your eggs in there one at a time whisking with an electric whisk until fully combined together. The last thing to add is just a pack of oreos that have been bashed up roughly, so big bits, little bits all in there and mixed through together until it looks all delicious and cookie and creme like.

Put it to one side, ideally you want to get a tin sort of a spring form one with a loose base, I used a a non stick one but if you do not have one use some baking paper.
Get a food processor and whizz up some more oreos with the butter, I used a small processor so I had to do it in batches, but just keep going until you are left with a big old clump of oreo goodness.
What you want to do is press the mixture into your tin base, use a spatula to help you flatten it down a bit. Then start to press it against the sides to build up a crust all around the edge. So just put it in the fridge for 5 minutes to firm up, it will just firm up a little bit. Then add the cream cheese mixture from earlier pouring it into the base, get it as close to the top as you can. Whack in the oven for a good 50 minutes gas mark 3 or equivalent see cooking conversion chart until it firms up it may go slightly brown on top, I kind of like that though  because it smells like freshly baked cookies.
With your cheesecake fully cooled take your outer ring off, lower it down to release your cheesecake using a bowl underneath, now that would be pretty darn amazing as it is but we are taking it up a notch. Take some more oreos whizzed up in butter again and just spreading it around the top layer again until fully merged and sealing the seams where you can. You do not even need to put that in the fridge, just let it stand while you melt your chocolate. Pour the white chocolate on and just spread it all over the top until fully coated. If you have any oreo bits leftover sprinkle them on top of the cheesecake.
Whack that in the fridge for another half an hour as an absolute minimum to firm up and oh yeah, that is our oreo cookies and cream cheesecake all done!
