No bake chocolate granola bars

Ingredients

80g butter

100g honey

50g light brown sugar

1tsp vanilla extract

200g instant porridge oats

30g rice krispies

1/2tsp cinnamon

150g chocolate chips

Chloe absolutely loved making these no bake chocolate granola bars – and she is only 5 Years old!!! So if she can make them you definitely can and trust us, they are extremely addictive!

First up get a small square baking tin and line it with some foil, this makes getting them out later much easier!

In a bowl combine together the butter, honey and sugar. Blast in the microwave on 15 second bursts until it has all melted, stirring in between. You want the sugar to have dissolved a little into the mix ideally. Tip the vanilla extract into the butter mix too and stir well.

In a big bowl add in the rice krispies, porridge oats (by instant oats, we mean the ones that cook in 2 mins in sachets, not rolled oats), also add in the cinnamon and mix through. Now tip in the butter mixture and stir so it coats really well ensuring all pieces are sort of stained in the light brown mix, this is going to be what holds it together, so if you want, add a little extra melted butter if you feel there’s not much grip there, but it will set as it chills.

Add in 2/3 of the chocolate chips and again stir through. Push the mixture into a tin and press down to level off, push the remaining chocolate chips on top of the granola mix pressing lightly into it so it will set in place. Now place in the fridge for a minimum of an hour to firm up, ideally 2 hours if you can.

Slice up, serve and enjoy!
