Naan Bread Pizza Recipe

Ingredients

Naan breads – use flavoured ones if you can

2tbsp mango chutney

2tbsp plain yoghurt

your favourite curry sauce

5 mini chicken fillets

1/2 red onion

few raisins or sultanas

handful spinach

fresh coriander

tbsp coconut

An absolutely delicious naan bread pizza recipe with an Indian twist! This pizza uses marinated chicken and flavoured naan breads to bring you simple pizza in a flash! Best used with a flavoured naan bread for extra tongue tingling taste and feel free to mix up the toppings – eg a classic marinara pizza topping or bbq sauce.

Start off by marinating your chicken in your curry sauce of choice (madras works well for a bit of heat!) marinade for at least 30 mins in the fridge or ideally overnight.
When ready to make the naan pizza cook in a frying pan for 10 minutes coating in the marinade until cooked through (roughly ten minutes) leave to rest on a chopping board whilst you slice the onion and prep other ingredients.

Grill the naan breads on a baking tray until lightly browned, this should not take long at all.

Meanwhile mix the mango chutney and yoghurt together in a bowl to create the base sauce. Spread this on the lightly browned naan ensuring to cover all areas of the exposed naan top to prevent burning then top the naan with the chopped chicken and all the other toppings except the coriander. Return to the grill for 4-5 minutes until the spinach has wilted and the coconut is toasted. Once ready sprinkle on fresh coriander and eat up, absolutely gorgeous!
