Lemon Lava Cake

Ingredients

70g white chocolate

50g butter

45g Plain flour

Zest ½ lemon

Heaped tbsp lemon curd

45g Icing sugar

1tsp vanilla extract

2 eggs + 2 egg yolks

Lemon lave cakes are amazing. Sorry I just have to get that out there from the off, everyone thinks of lava cakes being those naughty chocolate ones – which do not get me wrong, are incredible too… but this lemon and white chocolate zesty cake is super delicious and also very easy!

First pre-heat your oven to 400f or equivalent (see temp conversion chart)… and lightly grease your ramekin dishes with butter to make getting them out easier.

In a microwave melt the white chocolate and butter on 15 second bursts stirring in between until melted and creamy, this can take about 45 seconds. Pour this mixture into a large mixing bowl.

Add in all the other ingredients to the bowl…. so the flour, zest of a lemon, curd, icing sugar, extract and the eggs and beat really well together with a whisk until nice and smooth. Try and get all the lumps out!

Pour the mixture evenly into ramekins, this makes enough for 2/3, they do not rise much at all. Bake in the oven on a baking tray until they just start to turn light brown on the sides and form a skin. Remove from the oven, let cool for 5 mins or so and tip out onto a serving board. Dust on icing sugar and extra lemon zest too to finish before gobbling up!
