Homemade Slush Puppy

Ingredients

120ml (1 cup) cup water
75g (1/3 cup) caster sugar
220g (2 cups) ice cubes
approx 15 strawberries

Ah nostalgia! When I was a kid I loved slush puppy, or slush or slushies, slushy, snow – whatever you call them!! They even had a slush puppy machine toy that I wanted too but finally, after Years of hurt, here is how to make your very own from home! It takes minutes in your blender and uses fruit to make up for using any unnecessary food colouring’s! So mix up this homemade slush puppy recipe to your liking and enjoy!

We start off by making our syrup for the slush puppy. I am using sugar here, but some of you may wish to reduce the amount or omit if feeling hardcore as the strawberries have natural sweetness. That goes for switching the fruit up too, if you are using say blueberries instead, you may want to increase the water amount as blueberries have less water content than strawberries and are usually less sweet, tweak it to your liking – it’s your slush puppy!

In the pan combine the water (and sugar, again if using!) and then add your fruit and simmer for around ten minutes or until the fruit is softened. Use a potato masher to mush the fruit some more then drain into a bowl passing it through a sieve to get rid of the seeds / unwanted pulp. Allow the syrup mixture to cool to at least room temperature, it will thicken slightly and should take around 15 minutes or so.

Once ready get your blender and combine the syrup with the ice and whizz for around 30 seconds until the ice is broken down but is not completely smooth to get that awesome edible snow like slush puppy effect, serve in a glass, plonk a strawberry alongside to garnish and slurp through a straw!
