Chicken Parmesan Pizza Recipe

tbsp olive oil
350g tin plum tomatoes
1 garlic clove, chopped
1/2 red onion chopped
tbsp white wine vinegar
1tbsp tomato puree
handful fresh basil, tbsp dried parsley & tbsp oregano
mozzarella slices , grated parmesan & asiago cheese
300g mini chicken fillets
1 slice of bread (for breadcrumbs)
2 pizza packet mixes
salt & pepper

In this video recipe Barry combines his love of pizza & chicken parmesan to create a rather delicious chicken parmesan pizza recipe indeedy! The base can be made anyway you want, perhaps using store bought to save time, it’s then covered in a homemade marinara sauce, poached chicken chunks, cheese and basil – good times!
