Chicken and bacon burger

Ingredients

ciabatta buns

chicken breast (1 per burger)

tsp mild chilli powder

tsp ground cumin

tsp paprika

half a vegetable stock cube

rocket salad

2 slice of good quality bacon

1/2 red onion

1/2 lemon (zest and juice)

2tbsp mayonaisse

salt and pepper

An extremely easy recipe for a chicken and bacon burger – absolutely gorgeous indeed and ready in a flash.
First take your chicken breast and bash it thin and even between cling film sheets to create a flattened piece of chicken, run the paprika, cumin, chilli powder and stock cube into it with your hands all over, leave to one side and wash your hands.
Make the lemon mayonaisse by adding the mayo, zest and juice of a lemon, plus the salt and pepper into a bowl, mix and add more lemon juice as needed, leave to one side also.
Warm a frying pan and place the sliced ciabatta bun face down to toast the insides of them, repeat for all the ciabattas.
Fry up the onions for 5 minutes in the same frying pan with a little olive oil, then add in the bacon and cook together for another 5 mins or until nice and charred.
Meanwhile heat a griddle and cook the seasoned chicken breast until well charred and flip over repeating again until charred and cooked through.

Build the burger with some mayo on the base, a handful of rocket salad (washed), the chicken, bacon and onions, avocado slices on top and the lid of the ciabatta again with a little lemon mayo coating – super good!
