Pulled Chicken Burger

Ingredients

3 chicken breasts
5 tbsp your fave bbq sauce
(or make your own!)
rocket salad
coleslaw
red cabbage
small burger buns

In this video recipe I show you how to make a pulled chicken burger. This takes 20 minutes in total to make and is a speedy alternative to pulled pork that will go down a storm! Do not want it as a burger? You could always serve it in a jacket potato!

Start off by poaching the chicken breasts. I love poaching them as there is no oil added, just straight up water. Stick the chicken breasts in the bottom of the saucepan and fill with water to cover them and then add a bit more to cover them by say an inch. Over a medium flame begin to poach the chicken, when the water starts to bubble turn the heat down, place the lid on the saucpan and let gently cook away for ten minutes.

After the ten minutes is up take the chicken out of the pan and plonk in a bowl. You can now wash and drain the pan the chicken was in as it’ll be needed again.

Shred the chicken using two forks to create the pulled effect. Then return to the clean pan and pour over the bbq sauce mixing together gently until lightly coated. Plonk the lid on over a low flame warm through for ten minutes to stick to the chicken.

Build the pulled chicken burgers / sliders / baps / (insert other name!) by plonking a good amount of chicken down on the bun base, coleslaw on top, some grated red cabbage, rocket salad and the lid.
