2 minute vs 2 hour chocolate mousse recipe

by Barry Lewis

Ingredients

2 minute chocolate mousse

150g double cream, chilled

2tbsp cocoa powder

2tbsp icing sugar

Pinch salt

2 hour chocolate mousse

180g dark chocolate, melted

7 egg whites

¼ tsp lemon juice

50g caster sugar

2 minute chocolate mousse

You can make this two different ways… first up you can add all the ingredients into a plastic tub sealed with a lid and shake away until all the ingredients combine, or alternatively whip the cream in a bowl using an electric whisk and then add the other ingredients once thickened – serve immediately or keep chilled. That’s it!

2 hour chocolate mousse

Whisk the egg whites and the lemon juice in a mixing bowl until soft peaks form. Then slowly add in the sugar, continuing to whisk until stiff peaks form. Using the electric whisk blend in one third of the melted chocolate, once merged, slowly fold in the rest of the chocolate, do not over mix it, just fold in the egg whites until they are no longer visible. Add to serving dishes and chill for 2 hours!
