Stuffed Peppers

1 courgette, 1 onion, 1 garlic clove, 4 peppers, 200g rice, 250ml veg stock, 1tbsp red wine vinegar, salt & pepper, grated cheese, 250g beef mince (replace with quorn for vegetarian), bowl of peas, few bay leaves

In this video recipe Barry shows you how to make some delicious roast stuffed peppers. These are crammed full of rice and mince meat but to make vegetarian simply replace with quorn mince or more vegetables.
