Salted Caramel Bites

Ingredients

110g butter (1/2 cup)
1/2 cup (120 ml) double / heavyheavy cream
3 tbsp water
60ml golden syrup / corn syrup (1/4 cup)
200g sugar (1 cup)
salt flakes to top

These salted caramel bites are going to blow you away! For me there is something about salted caramel, the sweetness mixed with the tang of the salt, it’s extremely addictive, here’s how to make some chewy salted caramel bites that are so, so good and would make a great homemade gift!
First up mix together the cream and melted butter and leave to one side. If your butter is not melted sit it in a microwaveable object (like a jug I used in the video) and microwave for 2 minutes, then leave to one side.
Over a low flame add the water and syrup into the pan, I am using golden syrup but corn syrup works too and would give off lighter in colour caramels, add the sugar to the pan and heat over a low flame until boiling, do not stir the mixture.
Use a candy thermometer and get the temperature up to 160 degrees C, once at this point remove from the heat and stir in the cream mixture in batches stirring as you go using a spoon or thermometer, the thermometer works well as it is at the right temperature and will not shock the mixture. Be careful here as it can splash around a bit but the cream will calm down a bit once mixed through.
With all the cream combined in there return to the heat and bring up to between 115 – 119 degrees C the higher the temperature the more firmer the caramels will be so take that into consideration.
Pour into a lined tray and let stand for 25 minutes, sprinkle with sea salt at this stage then stick in the fridge for at least an hour before slicing into chunks.
