Salted Caramel Banana Bread

Ingredients

115g unsalted butter

120g plain flour

1 tsp baking powder

¼ tsp salt

150g sugar

60mls buttermilk

1 tsp vanilla extract

1 large egg

1 egg yolk

3 mashed bananas

25g bashed walnuts

 

For the salted caramel;

80mls water

250g golden caster sugar

1 tsp vanilla extract

120ml double cream

25g unsalted butter

Pinch sea salt- adjust to taste

How to make super delicious salted caramel banana bread, incredibly gorgeous yet super simple to chuck together, give it a go!

The first step for this cake is to make the salted caramel. Put a non-stick pan on a medium heat and pour in the water. Add in the sugar and bring to the boil, giving it a gentle stir to begin with then leave it to bubble. Cook for 3-4 minutes until golden brown. Once bubbles have formed all over the surface remove from the heat and pour in the cream, vanilla extract, butter, and salt. Carefully whisk this all together until it is well combine. Transfer the salted caramel into a jug and leave to cool.

Next you can begin to make the banana bread. Pre-heat the oven to 160C or equivalent, and grease and line a 1lb loaf tin. Using an electric hand whisk, mix together the sugar, butter, buttermilk, vanilla, egg, and egg yolk until smooth. Pour in the flour, bicarbonate of soda, and salt and gently fold this in. Add in the mashed bananas and mix, followed by half of your salted caramel. Give this a good mix together until it is well combine. Transfer your batter into the loaf tin and bake in the oven for 55-60 minutes. Leave it to cool in the tin for 10 minutes before transferring on to a wire rack. Sprinkle over some bashed up walnuts, and finish with a drizzling of salted caramel sauce. Delicious. This can be severed whilst it’s still slightly warm, or you can wait for it to cool down. It tastes amazing either way!
