Rocky Road Fudge

Ingredients

200g chocolate (1.6 cups)
120g chocolate to decorate (1 cup)
1tbsp butter
100g condensed milk (1/2 cup)
200g mini marshmallows (1.5 cups)
5tbsp popped popcorn
3tbsp maltesers

In this video I am joined by my Daughter Phoebe to show you how to make rocky road fudge!! Super delicious and speedy no bake crowd pleaser that will go down a storm!

Now lets get this out of the way, if you want to make a very basic chocolate fudge – basically 2 ingredient chocolate fudge you just need the condensed milk and melted chocolate, this will get you by, BUT….. lets turn it up a notch by making it into rocky road fudge!

Start off by melting the chocolate, butter and condensed milk together over a pan of simmering water in a mixing bowl. Keep stirring it together until it is completely melted and merged, the fudge mixture may look a little odd and tough but just go with it. Let the mixture cool down.

Get a dish ready, I used a silicone one so if you are too there is not much to do with it as it is flexible, but if you are using a standard tin be sure to line it with some baking parchment.

With the mixture slightly cooled add in the remaining rocky road fudge ingredients, so tip in the popcorn, marhsmallows and maltesers (basically add what you like) Phoebe really likes these ingredients, although I would have also added raisins!

Mix really well to coat the chocolate mixture with all the ingredients, it may be tough so use a spatula which is nice and flexible to push and move everything into place. Basically you want the fudge to be evenly gripping everything. Push into your tin and flatted down.

Chill in the fridge for a good 2 hours to firm up. Towards the end of chilling melt some more chocolate (dark, milk, white it doesn’t matter) and drizzle over the top in a pattern. Return to the fridge again for 10 mins to set, then simply chop into bite size chunks. I had enough for about 50!!
