Pumpkin & Coconut Soup

Ingredients

1 pumpkin
tin pumpkin flesh
chopped coriander
salt & pepper
tin coconut milk
500ml water
veg stock cube
single cream
1 red onion

In this video Phoebe takes the lead and shows you how to make a pumpkin & coconut soup served in a hollowed out pumpkin. It’s got a little red onion, veg stock, pepper and coriander in there to add more flavour and just works super good – hope you give it a try. Optional creamy spider web on top for a Halloween feel!
