Phoebes’ Butternut Squash Cakes

Ingredients

175g plain flour
175g light brown sugar
200g butternut squash
35g walnuts
90ml olive oil
1tbsp baking powder
1tsp cinnamon
2 eggs
90ml sour cream
2tbsp icing sugar
1 lemon & 1 orange (zest only)
pinch salt

With food revolution day on the 16th May 2014 the theme is all about getting kids cooking, which we have great fun doing – this is the second of 2 recipe videos for #frd2014 featuring my eldest Daughter Phoebe making some Butternut Squash cakes which are incredibly good.
