Pesto Melt

1 crusty roll

1tbsp olive oil

ground black pepper (optional)

2tbsp green pesto

few strips of pepperoni

freshly grated parmesan

Ever tried a pesto melt? These are delicious speedy tummy filler snacks! Pesto, parmesan & pepperoni come together and work a charm – try them!

The steps are super easy – first thing you need to do is slice your crusty roll in half, if one side is still rocking slightly when stood up, trim from the bottom to create a flat surface.
Brush with olive oil and season with a little pepper then place under your grill / broiler for a couple of minutes to brown – keep your eye on them as you do not want them to burn!

Next up remove from the grill, let cool for a minute or so then spread the pesto over with a spoon, ensure you cover all the edges too so they do not burn during the next grill. Add some grated parmesan and pepperoni strips then place under the grill for 5 minutes to melt through. Allow to cool for a moment before serving, absolutely gorgeous combo of tang and zing – give these Chloe approved pesto melts a go and show us your pictures of the attempts!
