Pepperoni should take a couple of days to make, it’s cured which gives it the redish colour and is quite a unique artisan process. I got hold of a kit which was part sausage making, part homemade pepperoni, that was supposed to make homemade pepperoni in 2 hours! It was an experience to say the least….. and, well as you’ll see, we ended up with a healthier pepperoni!
