Homemade Hot Cross Buns

225ml milk, 25g yeast,
1 cinnamon stick, 6 cloves,
tsp ground nutmeg, 50g + 1 tsp caster sugar,
450g strong flour, 100g butter,
pinch of salt & cinnamon,
2 eggs beaten, 200g mixed fruit (inc peel)
4tbsp plain flour & water (for cross)
You can make a glaze to add to them once baked
by mixing hot sugar & water or marmalade etc
