Here’s how to make some delicious gluten free brownies, this recipe video is hosted by Mrs Barry for the first time, hope you like it. These are actually pretty darn good, the icing is needed though just to perhaps make them stop tasting a little on the dry side but it works and there are lots of spins you can put on this recipe.
Start off by melting the chocolate and oil in a bowl over a pan of simmering water until smooth. You could do this step in the microwave if you wish on small bursts.
Meanwhile mash up your avocado in a bowl, once the chocolate and oil have merged together pour the chocolate mixture over the avocado and stir well to combine.
Once consistent in colour and fully coated / merged add in the maple syrup, coconut flour, vanilla and the cocoa powder, it will go a little tough in consistency, add a little more maple syrup if you like but you don’t want a runny batter. Press into a silicone brownie tray and bake for 12 minutes at 400f or equivalent – see ingredient conversion chart.
Meanwhile mash up the remaining avocado and mix in the cocoa powder and maple syrup (again use more syrup if you want a looser consistency icing) keep going until the mixture resembles an icing. Spread over the cooled brownies, cut into squares and serve up! Delicious!
